Valentines Day Inspired Vanilla Butterfly Cakes


Ingredients Needed: 


For the Cakes:

  • 110g butter or margarine 
  • 110g self raising flour
  • 2 eggs 
  • 110g caster sugar
  • 1 tsb vanilla extract
  • 1 tsb baking powder

For the Icing: 

  • 220g icing sugar
  • 110g butter
  • Milk
  • 1 tsb vanilla extract

Other ingredients needed:

  • Strawberry jam
  • Valentines inspired decorations 





Method:

1. Preheat your oven to 180c (fan), 200c (electric) or Gas mark 6

2. Lay out 12 cakes cases into a bun tin or a baking tray if you don't have a bun tin. 

3. Mix all the dry ingredients together (sugar , baking powder and flour). 



4. Add the butter and eggs. 

5. Whisk it all together until mixture is a smooth consistency.

6. Using a teaspoon, fill the cake cases with the mixture. 

7. Put the bun tin / baking tray in the oven for around 15 minutes or until the cakes are golden brown in colour.

8. Take them out of the oven and then place the cakes on a cooling rack and leave to stand for around 5 minutes. 





Icing: 

1. To make the icing, whisk together the butter and half of the caster sugar. 

2. Once they are mixed, add in the remaining caster sugar, vanilla extract and a dash of milk. 

3. Continue whisking, until all mixture is combined.


To Decorate:

1. Use a sharp knife to cut an upside down cone shape from the top of the cake. 
2. Cut this half to make the butterfly wings for your cakes.

3. Fill the hole in the cake with your icing. 

4. Add on top a layer or strawberry jam. 

5. Then place the butterfly wings on top, and sprinkle some icing sugar on top of your cakes. 

6. Decorate your cakes however you please with your Valentines Day inspired decorations.
